1 lb bulk pork sausage
1/2 lb sliced bacon
1 medium onion, chopped
6 large eggs
4 cups shredded hash browns (thawed if frozen)
2 cups shredded cheddar cheese
1 1/2 cups small curd cottage cheese
1 1/4 cups shredded Swiss cheese
Salt and pepper to taste
Optional: chopped green bell peppers, jalapeños, spinach, or diced tomatoes
Instructions
Preheat to 350°F (175°C) and grease a 9×13-inch baking dish.
Brown sausage in a skillet; drain and remove. In the same pan, cook bacon until crispy, drain, and crumble. Sauté onion in a little bacon grease until translucent.
In a large bowl, whisk eggs with salt and pepper. Add hash browns, cheddar cheese, Swiss cheese, cottage cheese, and cooked meats and onion. Mix until well combined.
Pour mixture into prepared baking dish. Spread evenly and bake uncovered for 35–40 minutes, or until eggs are set and top is golden.
