2 cups all-purpose flour
1 cup apple cider
1 cup brown sugar
1/2 cup granulated sugar
1/2 cup unsalted butter, softened
1 large egg
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 teaspoon vanilla extract
Optional: 1/2 cup chopped walnuts or pecans
Instructions
Preheat your oven to 350°F (175°C).
Line your baking sheet with parchment paper.
In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer until light and fluffy, about 2-3 minutes.
Beat in the egg and vanilla extract until well combined.
In another bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
Pour in the apple cider and mix gently until the dough is cohesive. If adding nuts, fold them in at this point.
Using a cookie scoop or a tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake the cookies for 10-12 minutes, or until the edges are golden brown while the centers remain soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.
