  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard

  • Juice of 1 lemon

Instructions

  1. Begin by coring and thinly slicing one large apple, preferably Granny Smith or Honeycrisp. To maintain its vibrant color and prevent browning, toss the apple slices in the juice of one lemon.
  2. In a large mixing bowl, combine 4 cups of shredded green cabbage and, if desired, 2 cups of shredded red cabbage for added color. Next, stir in 1/2 cup of shredded carrots, 1/2 cup of dried cranberries, and the previously prepared apple slices. If you like, add 1/4 cup of chopped green onions and 1/4 cup of chopped pecans or walnuts for extra flavor and crunch.
  3. In a small bowl, whisk together 1/2 cup of mayonnaise, 2 tablespoons of Greek yogurt, and 1 tablespoon of apple cider vinegar until smooth. Then, add 1 tablespoon of honey or maple syrup, 1 teaspoon of Dijon mustard, and sprinkle in salt and black pepper to taste.
  4. Pour the prepared dressing over the vegetable and apple mixture, using tongs or a large spoon to gently toss everything together until well coated. Once combined, cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes.
