  • 2 large Eggs
  • 2 teaspoons Vanilla Extract
  • 1 cup Applesauce (Can swap with extra mashed bananas.)
  • ½ cup Buttermilk (Replace with milk mixed with vinegar if needed.)
  • 23 cups Apples (like Golden or Pink Lady) (Choose sweet varieties.)
  • ¼ cup Brown Sugar (For filling.)
  • 2 tablespoons Butter (Can replace with coconut oil for dairy-free.)
  • 1 cup Mascarpone Cheese (Cream cheese works as a substitute.)
  • 1 cup Heavy Cream (Whipped for lightness.)
  • ½ cup Powdered Sugar

Instructions

  1. In a large mixing bowl, whisk together the dry ingredients until well combined.
  2. In another bowl, whisk together the wet ingredients until smooth.
  3. Gently mix in the applesauce into the wet ingredients.
  4. Gradually add dry mixture to wet ingredients alternately with buttermilk.
  5. Preheat your oven to 350°F (180°C), line muffin tin with cupcake liners, and fill each liner about ¾ full.
  6. Bake for approximately 20 minutes or until a toothpick comes out clean.
  7. Cook diced apples with brown sugar and cinnamon until tender, then set aside.
  8. Whip mascarpone cheese and heavy cream until stiff peaks form and mix in powdered sugar.
  9. Once the cupcakes are cooled, cut out a cone shape from the center, fill with apple filling, and top with frosting.
