A refreshing salad featuring artichoke hearts.

Ingredients

  • 1 can of artichoke hearts, drained
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Drain the artichoke hearts and cut them into quarters.
  2. In a bowl, combine artichoke hearts, cherry tomatoes, red onion, and olives.
  3. In a small bowl, whisk together olive oil and lemon juice.
  4. Pour the dressing over the salad and toss gently.
  5. Add feta cheese and season with salt and pepper.
  6. Serve immediately or chill for 30 minutes before serving.
