2½ cups granulated sugar
½ cup unsalted butter
½ cup evaporated milk
1 teaspoon vanilla extract
2½ cups quick oats
1 cup sweetened shredded coconut
1 cup chopped pecans
¼ teaspoon salt
Optional: Melted chocolate or white chocolate drizzle for garnish
Instructions
Measure out oats, coconut, and pecans. Line baking sheets with parchment paper.
In a heavy saucepan, combine sugar, butter, and evaporated milk. Cook over medium heat, stirring until it comes to a boil. Boil gently for 3–4 minutes, stirring constantly.
Remove from heat and stir in vanilla and salt. Quickly mix in oats, coconut, and pecans until evenly coated.
Drop spoonfuls onto parchment-lined sheets. Let cool at room temperature for 30–45 minutes until firm.
Drizzle with melted chocolate once set for extra flavor and presentation.
