Easy Baked Boneless Chicken Thighs for Juicy Weeknight Joy

  • 1/2 teaspoon Ground Black Pepper (white pepper can be used for milder flavor)
  • 1 teaspoon Onion Powder (or fresh chopped onions)
  • 1 teaspoon Garlic Powder (reduce amount if using fresh garlic)
  • 1 teaspoon Smoked Paprika (switch to regular paprika if desired)
  • 1 tablespoon Brown Sugar (honey or maple syrup can be used instead)
  • 1 teaspoon Italian Seasoning (or dried oregano/basil)
  • 2 pounds Boneless Skinless Chicken Thighs
  • 1/2 cup BBQ Sauce (for brushing during last 5 minutes)
  • as needed Fresh Vegetables (roasted vegetables are great)
  • as needed Rice or Salad (for a complete meal)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a sheet pan with aluminum foil.
  2. In a large mixing bowl, combine olive oil, salt, ground black pepper, onion powder, garlic powder, smoked paprika, brown sugar, and Italian seasoning. Stir well to form a marinade.
  3. Add the boneless skinless chicken thighs to the marinade and toss until coated.
  4. Arrange the coated chicken thighs on the prepared sheet pan with the smooth side facing up.
  5. Bake for 20-30 minutes, flipping halfway through, until internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 5 minutes before serving to allow juices to redistribute.
  7. Serve with your choice of sides and enjoy!
