Ingredients
Scale
1/2 cup Unsalted Butter (or coconut oil for dairy-free)
1 cup Light Brown Sugar (or coconut sugar)
1 large Egg (or 1/4 cup unsweetened applesauce for vegan)
1 teaspoon Vanilla Extract
1/4 teaspoon Fine Salt
1 cup All-Purpose Flour (or gluten-free blend)
2 large Mashed Overripe Bananas
1 cup Chocolate Chips (or dark chocolate/carob chips)
Optional: 1/2 cup Chopped Nuts (walnuts or pecans)
Optional: 1/2 cup Shredded Coconut (unsweetened)
Instructions
Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and grease.
Cream together softened unsalted butter and light brown sugar in a mixing bowl until light and fluffy.
Add the egg, vanilla extract, and fine salt. Mix until well combined.
Gradually add the all-purpose flour, mixing on low speed until just incorporated. Do not overmix.
Gently fold in the mashed overripe bananas until just combined, leaving the batter slightly lumpy.
Stir in the chocolate chips. Reserve some for topping if desired.
Pour the batter into the prepared pan and spread evenly. Sprinkle reserved chocolate chips on top.
Bake for 33-37 minutes, or until edges are golden brown and a toothpick inserted into the center comes out clean.
Let the bars cool in the pan on a wire rack for about 15 minutes before lifting out and cooling completely.
Slice into 16 squares once fully cooled.
Notes
Store bars in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
For a dairy-free option, substitute unsalted butter with coconut oil.
For a vegan option, use unsweetened applesauce instead of an egg.
Gluten-free bars can be made using a gluten-free flour blend.
Overripe bananas are best for maximum sweetness and moisture.
Avoid overmixing flour to maintain a tender texture.
Check baking time starting at 33 minutes to prevent overbaking.
