300g (10.5 oz) uncooked pasta (penne, fusilli, or spaghetti)
500g (1.1 lbs) chicken breast, sliced into bite-sized pieces
1 tbsp olive oil
1 tsp garlic powder
Salt and pepper, to taste
⅓ cup plain Greek yogurt (or light mayo)
2 tbsp sweet chili sauce
1 tbsp sriracha sauce (adjust to taste)
1 tbsp honey
1 tsp rice vinegar or lime juice
2 spring onions, finely chopped
Optional Garnish: red chili flakes, chopped cilantro, toasted sesame seeds
Instructions
Boil water in a large pot and cook pasta according to package directions until al dente. Drain and reserve a little pasta water.
Season chicken with garlic powder, salt, and pepper. Heat olive oil in a skillet and cook until golden and fully cooked (6–8 minutes). Remove from pan.
In a bowl, whisk together Greek yogurt, sweet chili sauce, sriracha, honey, and rice vinegar until smooth.
Return chicken and pasta to the skillet, pour in the sauce, and toss well to coat. Add a splash of reserved pasta water to loosen if needed.
Garnish with chopped spring onions, chili flakes, or sesame seeds. Enjoy hot or store for meal prep.
