Ingredients

Scale
  • 1 cup mayonnaise (substitute with Greek yogurt for a lighter option)
  • 1/3 cup Thai sweet chili sauce
  • 2 tablespoons Sriracha sauce
  • 2 tablespoons honey (consider maple syrup as a vegan alternative)
  • 1 pound boneless skinless chicken tenderloins
  • 1 cup buttermilk (substitute with regular milk and vinegar if in a hurry)
  • 1/2 cup all-purpose flour (use rice flour for a gluten-free option)
  • 1/4 cup cornstarch (try potato starch as a substitute)
  • 1 large egg (a flax egg works as a vegan substitute)
  • 1 tablespoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • a dash cayenne pepper
  • 1 cup plain panko breadcrumbs
  • 12 inches canola oil
  • 1/4 cup chopped parsley

Instructions

  1. In a medium bowl, combine mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Whisk until smooth and well blended. Cover and set aside.
  2. In a large bowl, whisk together buttermilk, all-purpose flour, cornstarch, and egg until smooth. Add Sriracha, garlic powder, salt, black pepper, and cayenne. Mix well.
  3. Add chicken tenderloins to the marinade and coat well. Cover and let marinate for at least 10 minutes.
  4. Spread panko breadcrumbs on a large plate. Remove chicken from marinade, letting excess drip off, and dredge each piece in breadcrumbs.
  5. Heat oil in a deep skillet or frying pan to 365°F. Fry chicken in batches for 2-3 minutes on each side, or until golden brown. Ensure internal temperature reaches 165°F.
  6. Use a slotted spoon to transfer chicken to a plate lined with paper towels to drain excess oil. Toss chicken in a large bowl with Bang Bang sauce to coat evenly.
  7. Sprinkle with chopped parsley and serve warm with steamed rice or your favorite sides.

Notes

  • Consider making your own Thai sweet chili sauce for added authenticity.
  • Adjust spice levels based on your heat preference.
  • For a lighter option, substitute mayonnaise with Greek yogurt.
