1 tablespoon olive oil
1/2 cup cooked rice (white or brown)
1/2 cup carrots, julienned or shredded
1/2 cup cucumber, thinly sliced
1/4 cup green onions, chopped (for garnish)
1 tablespoon sesame seeds (optional, for garnish)
1/4 cup mayonnaise (lighter version if desired)
2 tablespoons sweet chili sauce
1 tablespoon sriracha sauce (adjust to heat preference)
1 teaspoon honey
1 teaspoon rice vinegar
Instructions
Cook rice according to package directions. Set aside.
In a large skillet, heat olive oil over medium heat. Add ground turkey and cook, breaking apart with a spatula, until browned and fully cooked (7–8 minutes). Season with salt and pepper to taste.
In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth.
In bowls, layer cooked rice, turkey, shredded carrots, cucumber slices, and green onions. Drizzle with the Bang Bang sauce.
Garnish with sesame seeds and serve immediately. Enjoy!
