  • 2 lbs beef tenderloin tips, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 2 tablespoons flour
  • 1 ½ cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 tablespoon soy sauce
  • 1 tablespoon butter (optional)
  • Fresh parsley, for garnish
  • Optional: mashed potatoes, egg noodles, or rice for serving

Instructions

  1. Heat oil in a skillet over medium-high. Season beef with salt and pepper. Sear in batches until browned, about 2–3 minutes per side. Remove and set aside.
  2. Add onion to the skillet and cook 2–3 minutes. Add garlic and mushrooms. Cook 5 minutes until softened.
  3. Sprinkle flour over vegetables and cook 1 minute. Slowly whisk in beef broth. Add soy sauce, Worcestershire, and thyme. Simmer 5–7 minutes until thickened.
  4. Return beef to the skillet. Reduce heat and simmer 15–20 minutes until tender and flavors meld.
  5. Stir in butter for extra richness. Adjust seasoning as needed. Garnish with fresh parsley.
  6. Enjoy over mashed potatoes, buttered noodles, or rice.
  7. Sear beef and sauté vegetables as above.
  8. Transfer everything to a slow cooker and add broth, soy sauce, Worcestershire, and thyme.
  9. Cook on low 6–7 hours or high 3–4 hours.
  10. Thicken with a flour slurry 30 minutes before serving.
