1 medium Onion (chopped)
2 cloves Garlic (minced)
4 cups Vegetable Broth (or beef broth for non-vegetarian option)

Smoked Paprika (optional, to taste)
2 tablespoons Olive Oil (or any cooking oil)
Instructions
If using dried black eyed peas, rinse them thoroughly, soak them overnight in water, and drain before cooking. If using canned, simply drain and rinse them.
In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it’s translucent. Stir in the minced garlic and cook for another minute until fragrant.
Stir in your prepared black eyed peas (dried or canned) and mix well with the onion and garlic.
Add 4 cups of vegetable or beef broth to the pot, ensuring the peas are submerged. Bring the mixture to a boil.
Add salt, pepper, and cayenne or paprika to taste. Reduce the heat to low, cover the pot, and let it simmer for 30-40 minutes for dried peas, or 10-15 minutes for canned peas, until they are tender and the flavors meld.
Before serving, taste your dish and adjust the seasoning if needed. You can add more broth if you prefer a soupier consistency.
