  • 1 pound breakfast sausage, mild or spicy, removed from casings

  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 8 slices of bread, crusts removed (Texas toast recommended)
  • 1/4 cup butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
  2. In a large skillet over medium heat, cook the sausage, breaking it up with a spoon, until browned and cooked through (8-10 minutes). Drain excess grease.
  3. Add chopped onion and green bell pepper to the skillet. Cook until softened (5-7 minutes), stirring frequently.
  4. Remove from heat and let cool slightly.
  5. In a large bowl, whisk together cream of mushroom soup, milk, parsley, thyme, salt, and pepper.
  6. Add the cooled sausage and vegetable mixture to the soup mixture; stir gently to combine.
  7. Dip each bread slice in melted butter, coating both sides lightly.
  8. Arrange half the buttered bread in the baking dish, slightly overlapping.
  9. Spread half the sausage mixture over the bread.
  10. Sprinkle with half the cheddar and Monterey Jack cheese.
  11. Top with half the spinach.
  12. Repeat layers with remaining bread, sausage mixture, cheeses, and spinach.
  13. Whisk eggs lightly and pour evenly over the top layer.
  14. Bake for 45-50 minutes, or until golden brown and eggs are set. Check at 40 minutes.
  15. Let rest for 10-15 minutes before cutting and serving.
