  • Fresh rosemary (optional)
  • For the Rub:
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon mustard powder
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon Italian seasoning
  • For the Sauce:
  • 3 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon molasses
  • 2 tablespoons balsamic vinegar
  • 4 cloves garlic, minced
  • 1/4 cup ketchup
  • 1/2 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a small bowl, stir together the rub ingredients.
  3. Pat the pork chops dry with paper towels. Rub the spice mixture generously all over each pork chop.
  4. Heat canola oil in a large skillet over medium-high heat. Sear the pork chops in batches for 1-2 minutes per side until nicely browned.
  5. While the chops are searing, whisk together all the sauce ingredients in a separate bowl until smooth.
  6. Place the seared pork chops in a baking pan (a 9×13 inch pan works well).
  7. Pour the brown sugar sauce evenly over the pork chops. Add fresh rosemary if using.
  8. Bake for 25-30 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C).
  9. Remove from oven, let the pork chops rest for 10 minutes before serving.
