A simple southern recipe using canned black-eyed peas.

Ingredients

  • 2 cans black-eyed peas, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil
  • 1 cup chicken broth

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chopped onion, garlic, and bell pepper. Sauté until soft.
  3. Stir in cumin and paprika. Cook for 1 minute.
  4. Add black-eyed peas and chicken broth. Mix well.
  5. Simmer for 10 minutes. Season with salt and pepper.
  6. Serve warm.
