This rich and creamy Caramelized Onion Gruyère Dip is a perfect savory fall party appetizer. Slow-cooked caramelized onions offer natural sweetness, complemented by nutty Gruyère cheese for a gooey, flavorful experience. It’s ideal for Thanksgiving, holiday gatherings, or cozy nights in, served warm with crusty bread, crostini, or crackers.

  • 3 medium yellow onions, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon sugar (optional)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups shredded Gruyère cheese
  • 1/4 cup grated Parmesan cheese
  • Optional: fresh thyme or chopped parsley for garnish

Instructions

  1. Caramelize the onions: Heat butter and olive oil in a skillet over medium-low heat. Add sliced onions, salt, and pepper. Cook for 30–40 minutes, stirring occasionally, until golden brown. Stir in sugar halfway through if using.
  2. Mix the dip base: In a bowl, combine mayonnaise, sour cream, garlic powder, half the Gruyère, and all of the Parmesan.
  3. Combine with onions: Stir in the cooled caramelized onions into the dip base until evenly mixed.
  4. Bake the dip: Preheat oven to 375°F (190°C). Transfer the mixture to a baking dish.
  5. Top and bake: Sprinkle the remaining Gruyère cheese over the top. Bake for 20–25 minutes until bubbly and golden.
  6. Serve: Remove from oven, let cool for 5 minutes, garnish with fresh herbs, and serve warm with crostini, crackers, or sliced baguette.
