  • For the Cream Cheese Frosting:
  • 4 ounces cream cheese, softened
  • 4 tablespoons (1/2 stick) unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, whisk together the rolled oats, all-purpose flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, cream together the granulated sugar, brown sugar, and vegetable oil until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Stir in the grated carrots, walnuts (if using), and raisins or cranberries (if using).
  6. Drop rounded tablespoons of cookie dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  7. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  8. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  9. While the cookies are cooling, prepare the cream cheese frosting. Beat the softened cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, beating until light and fluffy. Stir in the vanilla extract and salt.
  10. Once the cookies are completely cool, frost them generously with the cream cheese frosting.
