Creamy Cheesy Chicken Noodle Soup in Under 30 Minutes

Ingredients

  • 2 cups cooked chicken, shredded
  • 8 oz egg noodles
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cheddar cheese, shredded
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp butter
  • 1 tbsp olive oil

Instructions

  1. Heat butter and olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add egg noodles and cook for 8 minutes until tender.
  6. Reduce heat to low. Stir in shredded chicken and heavy cream.
  7. Gradually add cheddar cheese, stirring until melted.
  8. Season with salt and pepper.
  9. Simmer for 5 minutes until heated through.
  10. Serve warm.
