Cheesy Garlic Butter Chicken Bites with Rigatoni in Alfredo Sauce is a comforting and flavorful dish perfect for any occasion. This easy recipe features tender garlic butter chicken bites tossed with rigatoni in a creamy, cheesy Alfredo sauce, ready in just 30 minutes.

Ingredients

Scale
  • 8 oz rigatoni pasta
  • 1 lb chicken breast, cut into bite-sized pieces
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried parsley
  • 1/2 tsp paprika

Instructions

  1. Cook rigatoni according to package instructions. Drain and set aside, reserving about 1 cup of pasta water.
  2. Melt butter in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Add chicken pieces to the skillet and cook for 5-6 minutes, stirring occasionally, until golden brown and cooked through.
  4. Pour in heavy cream and bring to a gentle simmer. Cook for 2-3 minutes to thicken slightly.
  5. Reduce heat to low. Gradually stir in grated parmesan cheese until melted and smooth.
  6. Season the sauce with salt, pepper, parsley, and paprika.
  7. Add the drained rigatoni to the skillet and toss to coat evenly with the cheesy garlic butter sauce.
  8. If the sauce is too thick, add a splash of the reserved pasta water until desired consistency is reached.
  9. Serve warm, with extra parmesan cheese if desired.

Notes

  • Use freshly grated parmesan for the best sauce texture.
  • Adjust seasoning to your taste.
  • If the sauce becomes too thick, use reserved pasta water to thin it out.
  • For a richer flavor, chicken thighs can be used instead of breasts.
