  • ½ teaspoon dried parsley

Instructions

  1. Activate the yeast: Combine warm water and sugar in a large bowl. Sprinkle yeast over the top and let sit for 5-10 minutes until foamy.
  2. Mix wet ingredients: Add salt and olive oil to the yeast mixture. Stir to combine.
  3. Add flour gradually: Add flour one cup at a time until a shaggy dough forms.
  4. Knead the dough: Knead by hand for 10-12 minutes or with a stand mixer for 7-8 minutes until smooth and elastic.
  5. First rise: Place dough in a greased bowl, cover, and let rise in a warm place for 1 to 1 ½ hours, or until doubled in size.
  6. Prepare workspace: Punch down dough, turn onto a floured surface. Line two baking sheets with parchment paper.
  7. Divide and roll: Divide dough in half. Roll one half into a 12×16 inch rectangle, about ¼ inch thick. Cut into ¾ to 1 inch wide, 12 inch long strips.
  8. Prepare cheese: Combine mozzarella and cheddar cheese in a small bowl.
  9. Fill and shape: Sprinkle cheese down the center of each dough strip. Fold dough edges over to seal. Pinch and twist each end to create rounded ‘knuckles’ for the bone shape. Place on baking sheets, 1 inch apart.
