  • 1 sheet puff pastry (store-bought or homemade)
  • 1/3 cup pesto (store-bought or homemade)
  • 1 ½ cups shredded mozzarella cheese (or a combination of mozzarella and Parmesan)
  • 1 tablespoon olive oil
  • 1 egg (for egg wash)
  • Flour (for dusting the work surface)
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, unroll your puff pastry. Roll it out slightly to smooth out any creases.
  3. Spread pesto evenly over the surface of the puff pastry, leaving about an inch around the edges.
  4. Sprinkle shredded mozzarella (and Parmesan if using) evenly over the pesto-covered pastry.
  5. Cut the pastry into strips about 1 inch wide. Roll each strip tightly into a coil, then arrange the rolls into a circular wreath shape on the prepared baking sheet.
  6. Brush the edges with an egg wash (1 egg beaten with 1 tablespoon of water). Bake for 20-25 minutes, or until golden and crispy.
  7. Remove from the oven and let it cool for a few minutes. Serve warm with a side of extra pesto for dipping.
