  • 1 pound (450 g) breakfast sausage
  • 1 (20-ounce / 567 g) package frozen shredded hash browns, thawed
  • 2 cups (225 g) shredded sharp cheddar cheese
  • 8 large eggs
  • 1 cup (240 ml) milk or half-and-half
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika
  • ½ cup (80 g) diced onion
  • ½ cup (80 g) diced red or green bell pepper
  • Optional: 2 tablespoons chopped parsley or chives for garnish

Instructions

  1. In a skillet, brown sausage over medium heat until cooked through. Drain excess grease and set aside.
  2. Spread thawed, dried hash browns evenly into a greased 9×13-inch casserole dish.
  3. Evenly layer diced onions, bell peppers, and sausage over the hash browns.
  4. Sprinkle shredded cheddar cheese over the top for a gooey, golden layer.
  5. In a mixing bowl, whisk together eggs, milk, salt, pepper, garlic powder, and paprika. Pour evenly over the casserole.
  6. Cover with foil and bake at 350°F (175°C) for 35 minutes. Uncover and bake an additional 10–15 minutes until the top is golden and the center is set.
  7. Let rest for 10 minutes before slicing. Garnish with chopped parsley or chives.
