Cheesy Taco Rice Skillet is a quick, one-pan Tex-Mex dinner made with seasoned ground beef, fluffy rice, sweet corn, and plenty of melted cheese. This easy weeknight meal is bold, comforting, and perfect for the whole family.

Ingredients

  • 1 lb (450g) ground beef
  • 1 tbsp olive oil (optional, if beef is lean)
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 packet taco seasoning
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 2 cups cooked rice (white or brown)
  • 1½ cups shredded cheddar cheese
  • Salt and black pepper, to taste
  • Optional garnish: chopped cilantro or green onions

Instructions

  1. Cook ground beef in a large skillet over medium heat until browned. Drain excess fat if needed.
  2. Add onion and garlic and cook 3–4 minutes until softened.
  3. Stir in taco seasoning and mix well.
  4. Mix in diced tomatoes with green chiles and corn.
  5. Fold in cooked rice and heat through.
  6. Sprinkle cheese on top, cover, and let melt.
  7. Garnish as desired and serve hot.
