- 2 teaspoons Dijon mustard
- 2 tablespoons fresh lemon juice
- 2 teaspoons Worcestershire sauce
- ¾ cup mayonnaise
- 2 teaspoons minced garlic
- 1 teaspoon anchovy paste (optional)
- ⅓ cup finely grated Parmesan cheese
- 8 oz uncooked pasta (rotini or penne)
- 2 hearts romaine lettuce, chopped
- 2 cups cooked chicken, shredded or chopped
- Croutons, to taste
- Extra Parmesan cheese, for serving
- Boil pasta in salted water until al dente. Drain and rinse under cold water.
- Whisk Dijon mustard, lemon juice, Worcestershire sauce, mayonnaise, garlic, anchovy paste, and Parmesan until smooth.
- Add cooled pasta to a large bowl with chicken and romaine lettuce.
- Pour dressing over salad and toss gently to coat.
- Sprinkle with croutons and extra Parmesan.
- Refrigerate at least 30 minutes before serving.
- Serve cold with optional cracked black pepper.
