Refreshing Chicken Caesar Pasta Salad for Summer and Beyond

Ingredients

  • 2 teaspoons Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons Worcestershire sauce
  • ¾ cup mayonnaise
  • 2 teaspoons minced garlic
  • 1 teaspoon anchovy paste (optional)
  • ⅓ cup finely grated Parmesan cheese
  • 8 oz uncooked pasta (rotini or penne)
  • 2 hearts romaine lettuce, chopped
  • 2 cups cooked chicken, shredded or chopped
  • Croutons, to taste
  • Extra Parmesan cheese, for serving

Instructions

  1. Boil pasta in salted water until al dente. Drain and rinse under cold water.
  2. Whisk Dijon mustard, lemon juice, Worcestershire sauce, mayonnaise, garlic, anchovy paste, and Parmesan until smooth.
  3. Add cooled pasta to a large bowl with chicken and romaine lettuce.
  4. Pour dressing over salad and toss gently to coat.
  5. Sprinkle with croutons and extra Parmesan.
  6. Refrigerate at least 30 minutes before serving.
  7. Serve cold with optional cracked black pepper.

Notes

  • Best served cold.
  • Can be made ahead for meal prep.
  • Adjust crouton quantity to preference.
