  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup plain yogurt (for chicken marinade)
  • 1 cup plain Greek yogurt
  • 1/2 cucumber, peeled, seeded, and grated
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried dill
  • Salt and pepper to taste
  • 1 cucumber, peeled, seeded, and thinly sliced
  • 1 tomato, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1012 pita breads

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, oregano, thyme, salt, pepper, paprika, and cayenne pepper (if using) to create the Greek chicken marinade.
  2. Add chicken pieces to the marinade, ensuring they are evenly coated.
  3. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, for the best Greek chicken gyro flavor.
  4. Preheat your oven to 400°F (200°C) or preheat your grill to medium-high heat for cooking the chicken.
  5. Place the marinated chicken pieces in a single layer in a large roasting pan or on the grill. Cook until the internal temperature reaches 165°F (74°C) – approximately 45-50 minutes in the oven (flipping halfway) or 6-8 minutes per side on the grill.
  6. Remove the cooked chicken and let it rest for 10-15 minutes before shredding with two forks for your Greek chicken gyro.
  7. While the chicken cooks, thinly slice the onion, cucumber, tomato, and red onion. Chop the fresh parsley and dill.
  8. Prepare the Tzatziki sauce: Combine Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, and dill in a bowl. Season with salt and pepper to taste. Mix well, cover, and refrigerate.
  9. Warm the pita breads in a dry skillet over medium heat for about 30 seconds per side, or in the oven at 350°F (175°C) for 5-7 minutes.
  10. Spread a generous amount of Tzatziki sauce inside each warm pita bread.
  11. Add a portion of the shredded Greek chicken to each pita.
  12. Top with the sliced vegetables and fresh herbs.
