A comforting and hearty soup combining chicken, noodles, and rice for a satisfying meal.

Ingredients

  • 2 cups chicken broth
  • 1 cup water
  • 1 boneless, skinless chicken fillet, diced
  • 1/2 cup uncooked rice
  • 1/2 cup egg noodles
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1/2 onion, diced
  • 1 clove garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, garlic, carrot, and celery. Cook for 5 minutes.
  3. Add diced chicken and cook until no longer pink.
  4. Pour in chicken broth and water. Bring to a boil.
  5. Add rice and noodles. Reduce heat and simmer for 15 minutes.
  6. Season with salt and pepper. Serve hot.
