1 pound boneless chicken thighs
1 cup Greek yogurt
2 tablespoons olive oil
2 tablespoons fresh lemon juice
3 cloves garlic, minced
1 tablespoon cumin
1 tablespoon paprika
1 tablespoon coriander
½ cup mayonnaise
½ cup Greek yogurt
1 clove garlic, minced
1 tablespoon lemon juice
¼ teaspoon salt
4 pieces pita bread
Instructions
In a large mixing bowl, combine Greek yogurt, olive oil, fresh lemon juice, minced garlic, and spices. Stir until blended.
Add boneless chicken thighs and coat well with the marinade. Cover and refrigerate for at least 1 hour.
Preheat grill or skillet over medium-high heat. Cook marinated chicken for 6-8 minutes on each side until golden brown and internal temperature reaches 165°F (75°C).
Transfer chicken to a cutting board and let it rest for 5 minutes before slicing into thin strips.
In a small mixing bowl, combine mayonnaise, Greek yogurt, minced garlic, lemon juice, and salt. Whisk until smooth.
Warm pita bread, spread creamy garlic sauce, add sliced chicken, and top with fresh vegetables. Serve immediately.
