Easy and nutritious meal prep bowls featuring juicy seasoned chicken and caramelized sweet potatoes. Perfect for quick lunches or dinners, these bowls can be prepared ahead for a week’s worth of meals.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 medium sweet potatoes, peeled and cubed into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato cubes with olive oil, salt, pepper, paprika, and garlic powder.
  3. Spread sweet potatoes on a baking sheet in a single layer.
  4. Roast for 25 minutes, flipping halfway through, until edges are crispy and caramelized.
  5. While sweet potatoes roast, season chicken breasts with salt and pepper.
  6. Heat a skillet over medium heat.
  7. Cook chicken breasts for 6-7 minutes per side until internal temperature reaches 165°F (74°C).
  8. Let chicken rest for 5 minutes before slicing.
  9. Divide roasted sweet potatoes evenly between meal prep containers.
  10. Top with sliced chicken.
  11. Seal containers and store in the fridge.

Notes

  • Store in airtight containers for up to 4 days.
  • Reheat in the microwave for 1-2 minutes until heated through.
  • Leave a small opening in the lid when reheating to allow steam to escape.
  • Can be eaten cold.
