Ingredients

  • 2 cups cooked chicken, shredded
  • 1 package (9 oz) cheese tortellini
  • 4 cups chicken broth
  • 1 cup water
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté onion, carrots, and celery until softened. Add garlic, basil, and oregano. Cook for 1 minute.
  2. Pour in chicken broth, water, and diced tomatoes. Bring to a boil.
  3. Add tortellini and cook according to package instructions.
  4. Stir in shredded chicken and simmer for 5 minutes.
  5. Season with salt and pepper. Serve hot.
