Chickpea Fried Eggs are a quick, protein-packed, veggie-based breakfast made with crispy spiced chickpeas and perfectly cooked eggs.

Ingredients

  • 2 tbsp olive oil
  • 1 (15-oz) can chickpeas, drained, rinsed, and patted dry
  • ¼ tsp ground turmeric
  • ¼ tsp smoked paprika
  • Salt and black pepper, to taste
  • 4 large eggs
  • ¼ tsp red pepper flakes (optional)
  • Fresh parsley or cilantro, chopped (optional)

Instructions

  1. Pat chickpeas completely dry using paper towels.
  2. Heat olive oil in a skillet over medium-high heat. Add chickpeas, turmeric, paprika, salt, and pepper. Cook 6–8 minutes until golden and crispy.
  3. Create small pockets and crack eggs into the pan. Cook until whites are set and yolks are runny, 3–5 minutes.
  4. Sprinkle with red pepper flakes and garnish with fresh herbs. Serve immediately.
