Ingredients

  • 1 cup (175 g) semi-sweet or dark chocolate chips
  • 1/2 cup (120 ml) heavy cream
  • 1/4 cup (25 g) freeze-dried raspberries, finely powdered
  • 1/4 teaspoon vanilla extract
  • Pinch of sea salt
  • 1/2 cup cocoa powder, for rolling
  • Optional coatings: crushed freeze-dried raspberries, powdered sugar, or shredded coconut

Instructions

  1. Blend freeze-dried raspberries into a fine powder and set aside.
  2. Heat heavy cream in a small saucepan until just beginning to simmer.
  3. Pour hot cream over chocolate chips in a bowl. Let sit 2 minutes, then stir until smooth.
  4. Stir in raspberry powder, vanilla extract, and sea salt until fully combined.
  5. Cover and refrigerate for at least 2 hours, until firm.
  6. Scoop ganache and roll into small balls.
  7. Roll truffles in cocoa powder or desired coating.
  8. Chill for 30 minutes before serving.
