This easy-to-make dessert is perfect for brunch, holidays, or a cozy treat, providing the comfort of a cinnamon roll with a golden, crunchy texture in every bite.

Ingredients

Scale
  • 16 sheets phyllo dough, thawed
  • ½ cup (115g) unsalted butter, melted
  • ¾ cup (150g) light brown sugar
  • 1 tablespoon ground cinnamon
  • ¼ teaspoon kosher salt
  • 1 cup (120g) powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch baking pan.
  2. In a small bowl, combine the brown sugar, cinnamon, and salt. Set this cinnamon sugar mixture aside.
  3. Place one sheet of phyllo dough on a clean surface and brush it with melted butter. Repeat this process, stacking four buttered sheets to create a base for your cinnamon phyllo pastry.
  4. Sprinkle about 2 tablespoons of the cinnamon-sugar mixture evenly over the top sheet of the stacked phyllo.
  5. Carefully roll the phyllo tightly from the long side into a log. Cut the log into 2-inch pieces.
  6. Repeat with the remaining phyllo sheets and cinnamon filling to create more phyllo cinnamon swirls.
  7. Arrange the phyllo dough cinnamon buns swirl-side up in the prepared baking pan.
  8. Bake for 20–25 minutes, or until the cinnamon phyllo pastries are golden and crisp.
  9. While the phyllo cinnamon rolls are baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.
  10. Drizzle the glaze over the warm cinnamon phyllo treats before serving.

Notes

  • Always keep unused phyllo sheets covered with a damp towel to prevent them from drying out.
  • Brush each layer of phyllo dough generously with butter for a crisp, even bake.
  • Avoid overfilling the phyllo dough for cinnamon rolls; a light sprinkle of filling ensures perfect structure.
  • Let the dessert cool slightly before glazing for the best texture.
  • For creative variations, add chopped nuts, chocolate chips, or a cream cheese mixture to the filling.
