Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat butter and sugar until light and fluffy (about 2–3 minutes).
  3. Mix in the egg and vanilla extract until smooth.
  4. In a separate bowl, whisk together flour, espresso powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture until just combined. Add milk if the dough feels crumbly.
  6. Wrap the dough and refrigerate for 30 minutes.
  7. Preheat oven to 350°F (175°C). Roll dough into balls, flatten slightly, and place on a lined baking sheet. Roll in sugar if desired.
  8. Bake for 8–10 minutes until edges are set. Cool on the pan for 5 minutes before transferring to a wire rack.
