  • 2 boneless, skinless chicken breasts or thighs
  • 1 can crushed tomatoes
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tsp Italian seasoning blend
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 cup small pasta shapes (ditalini, acini de pepe, or orzo)
  • 1/4 cup fresh basil leaves, roughly chopped or torn

Instructions

  1. Prepare Your Ingredients: Dice your onion, mince your garlic, and measure out all your spices.
  2. Combine in the Crock Pot: Place chicken at the bottom of the slow cooker. Pour in crushed and diced tomatoes, chicken broth, onion, and garlic. Add seasonings and stir gently.
  3. Slow Cook to Perfection: Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken is tender.
  4. Shred the Chicken: Remove chicken, shred it, and return to the soup.
  5. Introduce the Creaminess: Add cream cheese and stir until melted. Then add heavy cream and Parmesan cheese, stirring until combined.
  6. Cook the Pasta (Your Choice!): Add pasta during the last 30-60 minutes on HIGH or cook separately and add to bowls.
  7. Taste and Adjust: Adjust seasonings to your preference.
