2 boneless, skinless chicken breasts or thighs
1 can crushed tomatoes
1 can diced tomatoes
4 cups chicken broth
1 yellow onion, diced
3 cloves garlic, minced
2 tsp Italian seasoning blend
1 tsp dried basil
1 tsp dried oregano
1/4 tsp red pepper flakes (optional)
1 tsp salt
1/2 tsp freshly ground black pepper
8 oz cream cheese, softened
1 cup heavy cream
1 cup freshly grated Parmesan cheese
1 cup small pasta shapes (ditalini, acini de pepe, or orzo)
1/4 cup fresh basil leaves, roughly chopped or torn
Instructions
Prepare Your Ingredients: Dice your onion, mince your garlic, and measure out all your spices.
Combine in the Crock Pot: Place chicken at the bottom of the slow cooker. Pour in crushed and diced tomatoes, chicken broth, onion, and garlic. Add seasonings and stir gently.
Slow Cook to Perfection: Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken is tender.
Shred the Chicken: Remove chicken, shred it, and return to the soup.
Introduce the Creaminess: Add cream cheese and stir until melted. Then add heavy cream and Parmesan cheese, stirring until combined.
Cook the Pasta (Your Choice!): Add pasta during the last 30-60 minutes on HIGH or cook separately and add to bowls.
