3 large Russet potatoes
Vegetable oil (for frying)

½ cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
2 teaspoons sweet pickle relish
1 teaspoon white vinegar
¼ teaspoon garlic powder
For the Toppings:
1 medium yellow onion, finely chopped
1 tablespoon butter or oil
4 slices American cheese
Instructions
Wash, peel, and cut potatoes into ¼-inch sticks. Soak in cold water for 30 minutes, then drain and dry thoroughly.
Heat butter in a skillet over medium-low heat. Cook onions for 20–25 minutes until soft and golden brown.
In a bowl, whisk together mayonnaise, ketchup, mustard, relish, vinegar, and garlic powder. Refrigerate until ready to use.
Heat oil to 350°F (175°C). Fry potatoes in batches for 3–4 minutes until golden and crispy. Drain and salt immediately.
Arrange fries on a serving plate. Top with cheese slices and melt under a broiler if needed. Add caramelized onions and drizzle generously with secret sauce.
