Instructions

  1. Peel and cube the potatoes, place in a pot with cold water and salt, bring to boil and cook until fork-tender, 15-20 minutes.
  2. Blend cottage cheese until smooth in a food processor or blender, and set aside.
  3. Drain potatoes and return to hot pot, mash until mostly smooth for about 2 minutes.
  4. While warm, mix in blended cottage cheese and butter until creamy.
