  • 8 large eggs
  • 1/4 cup milk or cream
  • 2 tablespoons butter

  • For the Cowboy Topping:
  • 1 cup cooked bacon, crumbled
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • For Assembly:
  • 12 slider buns
  • Optional: Butter or mayonnaise for spreading on the buns

Instructions

  1. Make the Biscuits: Preheat oven to 450°F (232°C). In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in cold butter using a pastry blender or fingertips until the mixture resembles coarse crumbs. Gradually add cold buttermilk, mixing gently with a fork until just combined. Do not overmix. Turn dough out onto a lightly floured surface. Gently pat into a 3/4-inch thick rectangle. Fold in half, then pat back into a 3/4-inch thick rectangle. Repeat 2-3 times. Cut out biscuits using a 2-inch biscuit cutter. Place on an ungreased baking sheet. Bake for 12-15 minutes, or until golden brown. Cool slightly before transferring to a wire rack.
  2. Make the Sausage Patties: In a medium bowl, combine ground sausage, smoked paprika, garlic powder, cayenne pepper (if using), salt, and pepper. Gently mix until just combined. Do not overmix. Divide the sausage mixture into 12 equal portions. Shape each portion into a small, flat patty. Heat a large skillet over medium heat. Add sausage patties and cook for 5-7 minutes per side, or until cooked through and browned (internal temperature of 160°F/71°C). Remove from skillet and place on a paper towel-lined plate to drain excess grease.
  3. Make the Scrambled Eggs: In a medium bowl, whisk together eggs, milk or cream, salt, and pepper until well combined. Melt butter in a large skillet over medium-low heat. Pour egg mixture into the skillet. Cook, stirring constantly with a spatula, until the eggs are set but still slightly moist. Do not overcook. Remove from heat and set aside.
  4. Assemble the Sliders: If desired, lightly butter or spread mayonnaise on the cut sides of the slider buns. Place the bottom halves of the slider buns on a serving platter. Top each bun with a sausage patty, followed by a generous spoonful of scrambled eggs. Sprinkle crumbled bacon, shredded cheddar cheese, and chopped green onions over the scrambled eggs. Place the top halves of the biscuits on top of the toppings. Serve immediately while warm.
