  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups Parmesan cheese, shredded or grated

  • Red pepper flakes (optional)
  • Cracked black pepper (optional garnish)

Instructions

  1. Pat 1 lb steak dry. Season generously with salt, black pepper, garlic powder, and smoked paprika. Let rest at room temperature for 30 minutes. While steak rests, mince 5 cloves garlic and prepare remaining sauce ingredients.
  2. Heat 2 tbsp olive oil in a large skillet over medium-high heat until shimmering. Sear steak for 3-5 minutes per side, or until desired doneness. Remove steak, let rest for 10 minutes, then thinly slice against the grain.
  3. In the same skillet, melt 4 tbsp butter over medium heat. Add 5 cloves minced garlic and sauté for 1-2 minutes until fragrant. Pour in 1 cup heavy cream and 3/4 cup whole milk, stirring to combine. Bring to a gentle simmer.
  4. Stir in 1 1/4 cups shredded Parmesan cheese until melted and smooth. Season with salt, black pepper, and optional red pepper flakes. Simmer gently for 5-7 minutes until slightly thickened.
  5. Meanwhile, cook 20 oz cheese tortellini according to package directions in heavily salted boiling water until al dente. Reserve 1/2 cup pasta water, then drain.
  6. Add drained tortellini to the sauce and toss to coat. If the sauce is too thick, add a splash of reserved pasta water.
  7. Gently fold the sliced steak into the tortellini and sauce mixture. Warm through for 1-2 minutes.
  8. Serve immediately, garnished with optional fresh parsley and cracked black pepper.
