This Bold & Creamy Cajun Pasta is a rich, one-pot comfort meal made with tender chicken, Cajun seasoning, colorful vegetables, and a silky cream sauce.

Ingredients

  • 1 lb boneless, skinless chicken breast, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning (adjust to taste)
  • 1 bell pepper, sliced
  • ½ onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz penne pasta (or other short pasta)
  • ½ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Toss chicken pieces with 1 tablespoon Cajun seasoning.
  2. Heat olive oil in a large skillet or pot over medium-high heat. Cook chicken for 5–7 minutes until browned and cooked through. Remove and set aside.
  3. In the same pan, add bell pepper and onion. Sauté 3–4 minutes until softened.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Pour in chicken broth and heavy cream. Bring to a gentle simmer.
  6. Add dry pasta, stir, cover, and cook 10–12 minutes, stirring occasionally, until pasta is tender.
  7. Return chicken to the pot. Stir in Parmesan cheese and remaining Cajun seasoning.
  8. Season with salt and pepper to taste. Garnish with parsley and serve hot.
