1 lb boneless, skinless chicken breast, sliced
2 tablespoons olive oil
2 tablespoons Cajun seasoning (adjust to taste)
1 bell pepper, sliced
½ onion, thinly sliced
2 cloves garlic, minced
2 cups chicken broth
1 cup heavy cream
8 oz penne pasta (or other short pasta)
½ cup grated Parmesan cheese
Salt and black pepper, to taste
Fresh parsley, for garnish (optional)
Instructions
Toss chicken pieces with 1 tablespoon Cajun seasoning.
Heat olive oil in a large skillet or pot over medium-high heat. Cook chicken for 5–7 minutes until browned and cooked through. Remove and set aside.
In the same pan, add bell pepper and onion. Sauté 3–4 minutes until softened.
Add garlic and cook for 30 seconds until fragrant.
Pour in chicken broth and heavy cream. Bring to a gentle simmer.
Add dry pasta, stir, cover, and cook 10–12 minutes, stirring occasionally, until pasta is tender.
Return chicken to the pot. Stir in Parmesan cheese and remaining Cajun seasoning.
Season with salt and pepper to taste. Garnish with parsley and serve hot.
Notes
This dish can be customized with your choice of vegetables.
Adjust the level of Cajun seasoning to suit your taste.
For a lighter version, use half-and-half instead of heavy cream.
