1 lb beef Italian sausage (casings removed if links)
2 cups broccoli florets
1 tbsp olive oil
4 cloves garlic, minced
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tsp Italian seasoning
Salt and pepper to taste
1 package (9 oz) cheese tortellini
Fresh parsley, chopped, for garnish (optional)
Instructions
Prepare Ingredients: Remove casings from sausage and crumble. Mince garlic. Chop fresh parsley for garnish if using.
Cook Tortellini: Bring a large pot of salted water to a boil. Add tortellini and cook until al dente. Reserve 1/2 cup of pasta water, then drain.
Cook Sausage & Broccoli: In a skillet, heat olive oil. Brown sausage, breaking it into crumbles. Drain excess fat, leaving 1-2 tbsp. Add broccoli and sauté until tender-crisp.
Sauté Garlic: In the same skillet, add minced garlic and cook until fragrant.
Deglaze & Simmer Cream: Pour in chicken broth, scraping up browned bits. Simmer, then stir in heavy cream and Italian seasoning. Cook until sauce thickens.
Add Parmesan & Season: Remove from heat. Stir in Parmesan until melted. Season with salt and pepper.
Combine & Serve: Add sausage, broccoli, and tortellini to the skillet. Toss until coated. Add reserved pasta water if needed. Garnish with parsley and serve warm.
