Creamy Garlic Parmesan Tortellini with Beef Sausage and Broccoli is a comforting dish featuring tender tortellini in a rich garlic parmesan sauce with savory beef sausage and bright broccoli.

Ingredients

  • 1 lb beef Italian sausage (casings removed if links)
  • 2 cups broccoli florets
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 package (9 oz) cheese tortellini
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Prepare Ingredients: Remove casings from sausage and crumble. Mince garlic. Chop fresh parsley for garnish if using.
  2. Cook Tortellini: Bring a large pot of salted water to a boil. Add tortellini and cook until al dente. Reserve 1/2 cup of pasta water, then drain.
  3. Cook Sausage & Broccoli: In a skillet, heat olive oil. Brown sausage, breaking it into crumbles. Drain excess fat, leaving 1-2 tbsp. Add broccoli and sauté until tender-crisp.
  4. Sauté Garlic: In the same skillet, add minced garlic and cook until fragrant.
  5. Deglaze & Simmer Cream: Pour in chicken broth, scraping up browned bits. Simmer, then stir in heavy cream and Italian seasoning. Cook until sauce thickens.
  6. Add Parmesan & Season: Remove from heat. Stir in Parmesan until melted. Season with salt and pepper.
  7. Combine & Serve: Add sausage, broccoli, and tortellini to the skillet. Toss until coated. Add reserved pasta water if needed. Garnish with parsley and serve warm.
