  • 1 pound pasta (spaghetti, fettuccine, or linguine)
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup reserved pasta water
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the minced garlic and sauté for 1-2 minutes until fragrant and lightly golden.
  3. Pour in the heavy cream and bring to a simmer. Reduce heat to low and simmer for 5-7 minutes until slightly thickened.
  4. Remove from heat and stir in the Parmesan cheese until melted and smooth.
  5. Season with salt, pepper, and red pepper flakes if using.
  6. Bring a large pot of salted water to a boil.
  7. Cook pasta until al dente according to package directions.
  8. Reserve 1/2 cup of pasta water before draining.
  9. Drain the pasta without rinsing.
  10. Add the drained pasta to the skillet with the sauce. Toss to coat evenly.
  11. Add reserved pasta water, one tablespoon at a time, if the sauce is too thick, until desired consistency is reached.
  12. Serve immediately, garnished with parsley and extra Parmesan cheese.
