Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil (divided)
  • 1 teaspoon paprika
  • 1/2 teaspoon salt (divided)
  • 1/2 teaspoon black pepper (divided)
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 fresh jalapeños, sliced (adjust for spice level)
  • 1 cup chicken broth, low sodium
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Slice chicken breasts into cutlets or bite-sized pieces. Season with paprika, salt, and black pepper.
  2. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear chicken in batches for 3-4 minutes per side until golden brown. Transfer chicken to a plate.
  3. Add remaining olive oil to the skillet. Sauté diced onion for 5-7 minutes until soft. Add garlic and jalapeños; cook for 1-2 minutes until fragrant.
  4. Pour in chicken broth. Increase heat to medium-high and scrape up browned bits from the pan. Simmer for 2-3 minutes.
  5. Reduce heat to low. Stir in heavy cream and cheddar cheese. Whisk until cheese is melted and smooth. Adjust seasoning if needed.
  6. Return seared chicken to the skillet with the sauce. Simmer over low heat for 3-5 minutes to warm through.
  7. Garnish with chopped cilantro and serve warm with rice, pasta, or vegetables.
