Creamy Salmon Pasta is a comforting, creamy pasta dish that combines rich salmon and a creamy sauce with fresh herbs.

  • 2 salmon fillets (about 6 ounces each)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup vegetable broth (or chicken broth)
  • 8 ounces pasta (penne or spaghetti)
  • 1 cup fresh spinach, chopped
  • 1 tablespoon fresh parsley, chopped (optional)
  • Salt and pepper, to taste
  • 1/2 cup sun-dried tomatoes, chopped (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta, reserving about 1/2 cup of pasta water. Set aside.
  2. In a large skillet, heat olive oil over medium heat. Season salmon with salt and pepper. Cook salmon for 3-4 minutes per side until golden brown and cooked through. Remove salmon, flake into bite-sized pieces, and set aside.
  3. In the same skillet, add minced garlic and cook for about 30 seconds until fragrant. Add heavy cream, vegetable broth, and Parmesan cheese. Stir and simmer for about 2-3 minutes. If too thick, add reserved pasta water to adjust consistency.
  4. Stir in chopped spinach, sun-dried tomatoes (if using), and flaked salmon. Cook for another 2 minutes until spinach wilts. Add cooked pasta and toss to coat with sauce.
  5. Serve in bowls and garnish with chopped parsley. Enjoy with garlic bread or a light salad.
