Creamy Seafood and Shrimp Chili – A Cozy Dinner Delight

Ingredients

Scale
  • 1 pound Seafood (shrimp, scallops, tilapia)
  • 8 ounces Cream Cheese
  • 1 cup Shredded Cheese
  • 1 can Beans
  • 1 unit Onion
  • 2 cloves Garlic
  • 1 teaspoon Cayenne Pepper
  • 1 tablespoon Chili Seasoning
  • 4 cups Vegetable or Fish Stock

Instructions

  1. Begin by gathering all your ingredients for the Creamy Seafood and Shrimp Chili. Chop one onion and mince two cloves of garlic, then set them aside.
  2. In a large pot, heat 2 tablespoons of oil over medium heat. Add the chopped onion and minced garlic, sautéing for 3-4 minutes.
  3. Stir in your choice of seafood along with one can of drained beans. Add chili seasoning and cayenne pepper, cooking for 2-3 minutes.
  4. Slowly pour in 4 cups of stock while stirring. Add 4 ounces of cream cheese and 1 cup of shredded cheese, mixing until creamy.
  5. Bring the chili to a gentle simmer, cooking uncovered for 15-20 minutes until the seafood is cooked.
  6. If too thin, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water, stir into the chili, and simmer for 2-3 minutes.
  7. Ladle into bowls and serve immediately, optionally garnishing with fresh herbs or extra cheese.
