1½ pounds (680g) boneless, skinless chicken breasts or thighs
1 teaspoon Italian seasoning
½ teaspoon paprika
Salt and black pepper to taste
1 tablespoon olive oil
1 cup (200g) dry orzo
3 cloves garlic, minced
½ cup sun-dried tomatoes, chopped
1 cup (240ml) chicken broth
1 cup (240ml) heavy cream
½ cup (50g) freshly grated Parmesan cheese
1 cup fresh spinach
½ teaspoon dried oregano
Optional: red pepper flakes for heat
Instructions
Pat chicken dry and season with Italian seasoning, paprika, salt, and pepper. Heat olive oil in a large skillet over medium heat. Sear chicken for 4–5 minutes per side until golden. Remove and set aside.
In the same pan, add garlic and sun-dried tomatoes. Cook for 1 minute until fragrant.
Stir in orzo. Pour in chicken broth and heavy cream. Add oregano and bring to a gentle simmer. Return chicken to the pan. Cover and cook 10–12 minutes, stirring occasionally, until orzo is tender and chicken is fully cooked.
Stir in spinach and Parmesan cheese. Allow spinach to wilt and cheese to melt. Adjust seasoning as needed. Let rest 5 minutes before serving.
