Creamy Tuscan Shrimp Orzo is a one-pot meal packed with tender shrimp, creamy orzo, spinach, sun-dried tomatoes, and artichokes. This dish is rich and comforting, perfect for weeknight dinners or special occasions.

  • 1 lb large shrimp (peeled and deveined)
  • 1 tablespoon olive oil
  • 2 teaspoons garlic (minced)
  • 1 cup orzo pasta
  • 2 cups chicken broth (or vegetable broth for a lighter option)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes (drained and chopped)
  • 1 cup baby spinach (fresh)
  • 1/2 cup artichoke hearts (canned, drained, and chopped)
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Season the shrimp with salt and pepper. Once the oil is hot, add the shrimp and cook for 2-3 minutes per side until pink and opaque. Remove shrimp from the skillet and set aside.
  2. In the same skillet, sauté the garlic for 30 seconds until fragrant. Add the orzo and stir to coat in the garlic and oil. Let it cook for 1-2 minutes.
  3. Pour in the chicken broth and bring to a simmer. Cook the orzo according to package instructions, about 8-10 minutes, until most of the liquid is absorbed and the orzo is tender.
  4. Add the heavy cream and Parmesan cheese. Stir until everything is combined and creamy.
  5. Stir in the sun-dried tomatoes, spinach, and artichoke hearts. Let the spinach wilt and the artichokes heat through, about 2-3 minutes.
  6. Return the shrimp to the skillet and cook for another 2-3 minutes to heat through.
  7. Garnish with fresh basil or parsley and serve immediately.
