Freshly grated Parmesan cheese
Panko breadcrumbs
Italian seasoning

Preheat your oven to 400°F (200°C).
If your chicken breasts are thick, consider pounding them to an even thickness for consistent cooking.
In one bowl, whisk together the eggs. In another bowl, mix the panko breadcrumbs, grated Parmesan, Italian seasoning, salt, and pepper.
Dip each chicken cutlet into the egg mixture, allowing any excess to drip off, then coat it thoroughly with the breadcrumb mixture.
Line a baking sheet with parchment paper or lightly grease it. Place the coated chicken cutlets on the sheet, making sure they don’t overlap. Drizzle a little olive oil over the top of each cutlet.
