  • 1.5 lbs flank steak, thinly sliced against the grain
  • 1 tbsp olive oil
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1/2 cup beef broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1/2 tsp cayenne pepper (optional)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 12 small corn or flour tortillas
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • Sour cream or Mexican crema, for serving (optional)
  • Pickled jalapeños, for serving (optional)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add flank steak and cook until browned on all sides, about 5-7 minutes. Remove and set aside.
  2. Add sliced onions to the skillet and cook until softened, about 5 minutes.
  3. Add minced garlic and bell peppers; cook for 3-4 minutes until slightly softened.
  4. Stir in diced tomatoes (undrained), beef broth, chili powder, cumin, smoked paprika, oregano, cayenne pepper (if using), salt, and pepper. Bring to a simmer.
  5. Return browned beef to the skillet. Reduce heat to low, cover, and simmer for at least 20 minutes, or until beef is tender.
  6. Remove lid and let sauce reduce slightly to thicken, if desired.
  7. While beef simmers, warm tortillas in a dry skillet over medium heat for 30 seconds per side, or microwave wrapped in a damp paper towel for 30 seconds.
  8. Fill each tortilla with about 1/4 cup of the beef mixture.
  9. Top with shredded Monterey Jack and cheddar cheese.
  10. Add diced avocado.
  11. Sprinkle with chopped cilantro.
  12. Add sour cream or Mexican crema and pickled jalapeños, if desired.

Notes

  • For extra flavor, marinate flank steak in lime juice, chili powder, and cumin for at least 30 minutes before cooking.
  • For spicier tacos, add more cayenne pepper or use spicier chili powder; add chopped jalapeños to the filling.
  • For a vegetarian option, substitute beef with seasoned black beans or mushrooms.
  • Serve with shredded lettuce, diced tomatoes, onions, and your favorite salsa. A side of Mexican rice and refried beans complements the meal.
