These Crispy Sweet Potato Bites are golden, cheesy, slightly smoky, and completely irresistible. Baked to perfection and topped with melted cheddar, turkey bacon, sour cream, and fresh chives, they make the perfect healthy snack or crowd-pleasing appetizer.

  • 2 medium sweet potatoes (about 1 pound), sliced into ¼-inch rounds
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon (or vegetarian alternative), cooked and crumbled
  • ⅓ cup sour cream
  • 2 tablespoons fresh chopped chives
  • Optional toppings: mashed avocado, pickled jalapeños

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Wash and cut sweet potatoes into even ¼-inch rounds for uniform cooking.
  3. In a bowl, mix olive oil, garlic powder, smoked paprika, salt, and pepper. Toss sweet potato slices to coat evenly.
  4. Arrange slices in a single layer on the baking sheet. Bake for 20–25 minutes, flipping halfway through, until golden and crispy.
  5. Sprinkle cheddar and crumbled turkey bacon over each round. Broil for 2–3 minutes until cheese is melted and bubbly.
  6. Let cool slightly. Top with sour cream and sprinkle with chives before serving.
